Spiced Sweet Potato Recovery Smoothie
This is an empowering smoothie to fuel you postworkout! Turmeric, ginger, and cinnamon are known for their anti-inflammatory properties, which can help your muscles rebuild and recover after exercise. The sweet potato, banana, and carrots give your body the carbohydrates it needs, plus vitamins, minerals, and antioxidants. The tofu adds a hearty amount of protein, while the almond butter and flax seed provide both healthy fats and protein. A small amount of black pepper is included to boost the body’s absorption of curcumin, the active ingredient in turmeric that fights inflammation and improves muscle repair. On top of all these healthful benefits, this smoothie is delicious! It has just enough sweetness and tastes like sweet potato pie in a glass. Makes 1 serving (24 oz)
Ingredients
1 small banana
1/2 leftover baked sweet potato (see recipe), peel removed
1/4 c shredded carrots
1/4 of a 14 oz block of tofu
1 c unsweetened coconut milk (add cold water if too thick)
1 tbs almond butter
2 tsp ground flax seed
1 tsp pure vanilla extract
1 tsp honey (or more to taste)
1/2 tsp turmeric powder
1/2 tsp ground ginger powder
1/4 tsp cinnamon
Sprinkle fresh ground black pepper
Directions
Blend all ingredients until smooth.
