Easy Baked Sweet Potatoes

Ingredients
1-2 tsp avocado oil (or your favorite cooking oil)
4 medium sweet potatoes
Directions
Preheat oven to 375 deg F.
Scrub and clean sweet potatoes. Dry them with a towel.
Pierce each sweet potato several times with a fork.
Drizzle a small amount of oil onto each sweet potato and use your hands to cover the oil over the potato skin.
Place sweet potatoes on a baking sheet covered with parchment paper.
Bake for about 50 minutes or until soft.

Baked sweet potatoes can be stored in the refrigerator for about 4-5 days.
