Easy Baked Sweet Potatoes

Baked sweet potatoes are naturally sweet and nutritious. They are high in fiber, antioxidants, vitamins, and minerals.   • Prep Time: 5 minutes

Ingredients

  • 1-2 tsp avocado oil (or your favorite cooking oil)

  • 4 medium sweet potatoes

Directions

  • Preheat oven to 375 deg F.

  • Scrub and clean sweet potatoes. Dry them with a towel.

  • Pierce each sweet potato several times with a fork.

  • Drizzle a small amount of oil onto each sweet potato and use your hands to cover the oil over the potato skin.

  • Place sweet potatoes on a baking sheet covered with parchment paper.

  • Bake for about 50 minutes or until soft.

Notes

  • Baked sweet potatoes can be stored in the refrigerator for about 4-5 days.

  • Reheat baked sweet potatoes in the microwave for an easy lunch or dinner.

  • Chop up leftover baked sweet potatoes to add to salads, quinoa, pasta, or scrambled eggs.

  • Freeze sweet potatoes: leftover sweet potatoes are great in smoothies! Let them cool after baking, then remove the peel and chop them into small pieces. Place in a single layer in a freezer bag or glass container. Toss in a few cubes to add some vegetables, carbohydrates, and natural sweetness to your smoothies.
