Beet and Berry Juice with Celery & Greens
Enjoy this drink as an afternoon pick-me-up or to energize you first thing in the morning! Made with fresh fruits and vegetables, it will leave you feeling light, energized, and satisfied. It is super refreshing and surprisingly sweet due to the berries and pineapple. I call this a “juice” rather than a smoothie because it is thinner and less sweet than your typical smoothie, more like what you’d get out of a juicer. However, since it’s made by blending whole fruits and vegetables, it has all the healthful fiber of a smoothie but with more of a juice consistency. It is also packed with vitamins, minerals, antioxidants, fiber, protein, and healthy fats.
Prep time: 5 minutes
Makes one 16 oz portion
Ingredients
1/2 small beet, peeled and diced
1 stalk celery, diced
A couple handfuls mixed greens
1/2 c frozen mixed berries
A few pieces frozen pineapple
1 tbs chia seeds (omit for smoother consistency)
1 tbs almond butter
1 (10 g) scoop collagen powder
1/2 c - 1 c cold water (enough to blend it)
Directions
Combine all ingredients in a high power blender and blend until smooth.
Pour into a 16 oz container and enjoy!
