Healthy Breakfast Bowl

This has been my go-to breakfast lately! It has the satisfying crunch of granola without all the added sugar and oil. Plus it starts your day with 33g of protein and 12g of fiber to keep you satisfied and energized all morning. The frozen blueberries and cacao nibs also add lots of health-boosting antioxidants (while making it taste like dessert!). It's also a great source of many minerals and vitamins including calcium, magnesium, and vitamins B2, B12, E, and K.

Ingredients

  • 1/2 c plain full-fat yogurt

  • 1/2 c cottage cheese (can substitute more yogurt if desired)

  • 2 tbs ground flax seeds

  • 1/2 c frozen blueberries

  • 1/4 c chopped almonds

  • 2 tbs roasted pumpkin seeds

  • 1 tbs cacao nibs

Directions

  • Scoop yogurt and cottage cheese into a bowl. Mix in ground flaxseeds.

  • Add all other ingredients on top and enjoy!

Notes

  • Feel free to modify this as desired. If you’re not a fan of cottage cheese, you can easily substitute more yogurt, or vise versa. You can also sub in your favorite nuts and seeds or use fresh berries rather than frozen (although the frozen blueberries give it an almost ice cream-like quality).

  • If you want to make this faster to throw together in the morning, mix together the chopped almonds, pumpkin seeds, and cacao nibs and store them in a container in the refrigerator. That way you can just quickly sprinkle some on top in the morning.
